Brewer and Cellar Person
We’re seeking a hands-on Brewer & Cellar Person to join us, you’ll be involved in all aspects of production, ensuring the highest standards of quality to support our journey of making Beautiful Beer.

We’ve built strong foundations for future growth in terms of our customer base and brand, and in operate out of our state-of-the-art brewery production facility and taproom in the city centre. We are looking for a Brewer and Cellar person to join our team to ensure we continue on our journey making Beautiful Beer.
Job Description
As the Brewer and Cellar person, you will work in all areas of the brewery production, with a focus on wort production, and cellaring, you will also support for the de-alcoholisation of beer and quality control tasks when cover is needed.
Operation and upkeep of equipment, and maintaining quality control throughout all aspects of the brewing role will be a focus for this position. Brewers will receive and process raw materials, packaging materials, and chemicals.
Training will be given as required. All employees are expected to abide by the HACCP prerequisites and Company Policies. Hours may vary in order to accommodate production and staffing needs.
Responsibilities include (but are not limited to):
Wort Production
Tank CIP’s
Centrifuge Operations
Maintaining and fulfilling Total Quality Management System
Steam Boiler - Daily Check and weekly responsibilities
Cellar Duties inc. Samples, Cropping, Hopping, Sign offs, Caustic Titration, Co2 Recovery checks
In addition to the above tasks you will be required to support the running of the de-alcoholisation machine and quality control processes.
Attendance and involvement at daily brewing team meetings at the start of each day and weekly whole team meetings. The daily meetings will help define your responsibilities and work priorities for each day and the week.
Contributing to and abiding by a HACCP system to maintain standards of Food Safety, Food Quality, and Personal Safety. Brewers are required to participate in HACCP team meetings
Following and maintaining the use of standard operating procedures - unless otherwise instructed - to meet quality specifications and ensure proper brewhouse/cellar/packaging operations
Attending regular beer tasting meetings
Attending beer development meetings for recipe creations and beer improvement
Contributing to and abiding by a Quality Management system, whereby all beers are tested against various specifications throughout production
Operation, cleaning and maintenance of equipment in a safe and efficient manner
Maintaining the cleanliness of all areas of the brewery
Completing all necessary paperwork accurately and on time
Contributing to and abiding by a Stock Control system
Communicating regularly and efficiently with Wiper and True staff
Performing other duties as required

Desired minimum qualifications
IBD General Certificate level or equivalent is advantageous
A basic understanding of using word processing, spreadsheets and particular programmes for brewery functions
Must have previously worked in a similar or related field
Minimum 2+ Years Brewing Experience or 4 years general brewery experience
Work environment
The noise level in the work environment is moderate to loud a lot of the time
There will be a requirement in this role for working at heights and to lift production equipment up to 25kgs and moving kegs and casks, which can weigh up to 45 kgs
Temperatures may vary seasonally in work areas
Brewers will be supplied with personal protective equipment and workwear as necessary

Location: Old Market Production Site, Easton Road, Bristol
Salary : Range is £28,000.00 - £32,200.00 per annum, depending on training, skills and experience. We review our pay annually and will be adjusting these in March.
Hours: 40 hours per week on rotating weekly shifts of early and lates from Monday to Friday with one rotating Tuesday to Saturday each month. Example of the rota over a 4 week period is shown below;
Unsocial Hours Uplift:
There is an uplift of x1.1 to hours outside of 8am-8pm Monday - Friday
2pm - 10pm shifts:
You may be required to work between 2pm - 10pm on brew or cellar shifts depending on production need. We will communicate the shift changes with as much notice as possible. At a point in time these shifts will become permanent. We will give 1 month notice before the shifts are implemented on a permanent basis.
As production volumes change throughout the year, based on seasonality, we reserve the right to adjust these shift start and finish times to accommodate any fluctuations, this could include returning the Cellar shifts to core hours for example, all changes will be given a month’s notice as a minimum.
